Asparagus & Egg Salad from SkinnyTaste®


We're always using the Negg® hard-boiled egg peeler to save time in the kitchen. This week, we recreated a salad from the wonderful Skinnytaste blog - it's certainly one of our favorite destinations for easy and healthy recipes.

Hard-boiled eggs are a wonderful way to add protein to a variety of salads. Which is your favorite salad to create with hard-boiled eggs?


2 Large egg, hard-boiled and peeled using Negg® instructions
1 2/3 Cups chopped asparagus
2 Slices cooked and crumbled center cut bacon
1/2 Teaspoon Dijon mustard
1 Teaspoon extra virgin olive oil
1 Teaspoon red wine vinegar
Pinch salt and pepper, to taste


  1. Bring a pot of water to a boil, add the asparagus and cook until al dente (Cooked just enough to retain a somewhat firm texture).
  2. Drain asparagus and run under cold water.
  3. Set aside.
  4. In a small bowl mix the Dijon, oil, vinegar and a pinch of salt and pepper.
  5. Arrange the asparagus on a plate, top with sliced hard-boiled egg and bacon and drizzle with the vinaigrette. Enjoy!
