Bonnie's good friend, Penny, visited Bonnie's Kitchen this week as our first special guest. A talented home chef, Penny taught us her favorite recipe for potato salad with sliced hard-boiled egg. Easy, tasty, and quick to pull together, this recipe makes for an ideal lunch or perhaps a dinner side. What makes this salad even easier to make? Shaking your hard-boiled egg with the Negg® egg peeler!
Ingredients:
1 large hard-boiled egg, peeled and sliced.
A medium-sized bowl of small red potatoes, halved.
1/3 - 1/2 Cup chopped celery
1/3 Cup chopped scallions
1 Teaspoon Grey Poupon mustard or to taste
1/2 Cup mayonnaise (we recommend low-fat Hellman's®)
Pinch of salt and pepper
Sprinkle of chopped parsley
Instructions:
- Add the celery and scallions into the bowl of potatoes.
- Separately, mix the mustard, mayonnaise, and salt and pepper together.
- Add the mustard mixture into the bowl of potatoes and combine.
- Pour the salad into a bowl and top with sliced egg. Sprinkle with parsley and enjoy!
